<h5><b>Seitan</b></h5>
<p><span style="font-weight: 400;">Seitan bliver brugt i det asiatiske køkken og er en meget gammel traditionel del af kosten i Kina, Japan og Korea. Seitan er en god erstatning for kød i varme retter, da indholdet af protein er højt. Seitan er udvundet af hvede og består af ren glutenprotein. Der er 17,2 gram protein pr. 100 gram i seitan, hvor der i kyllingebryst er 21 gram protein. Det produceres ved at ælte hvedemel med vand og derefter skylle stivelsen ud, indtil man står med ren gluten. Seitan er naturligt smagsneutralt og kan derfor nemt krydres med forskellige krydderier og marinader. Seitan er typisk kogt i soyasauce og har en konsistens som kød. Seitan kan både koges, steges og bages. På Biogan.dk har vi udviklet opskrifter, hvor seitan indgår i retter som du kender. <h5><b>Jackfruit</b></h5>
<p><span style="font-weight: 400;">Jackfruit er en tropisk frugt og har en mild, sød og frugtig smag. Den vokser i Asien, Afrika og Sydamerika. I Danmark og hos <a href="https://shop.biogan.dk/shop/frontpage.html">Biogan </a>kan man købe jackfruit på dåse. Den er meget smagsneutral og kan derfor krydres med forskellige krydderier og marinader. Den minder om ananas i sin konsistens og er god at bruge som køderstatning i varme retter. Prøv den i en BBQ-marinade til en pulled-jackfruit burger eller kom den i din pastaret.</span><span style="font-weight: 400;"><br />
</span><span style="font-weight: 400;"> Jackfruit har et lavt kalorie indhold.</span></p>
<h5><b>Tofu</b></h5>
<p><span style="font-weight: 400;">Det er nok den af de køderstatninger som vi kender bedst i Danmark. Tofu er en råvare, som har eksisteret i rigtig mange år, men som mest er udbredt i Kina, Japan og Korea. Tofu er fremstillet af tørrede sojabønner og kan fremstilles i 4 forskellige teksturer: ekstra blød, silketofu, fast og ekstra fast. Det bløde tofu er bedst til supper og kan også anvendes i smoothies og pandekager, hvor det faste tofu fungerer godt til at blive stegt på panden. Vores tofu er fast i konsistensen og er derfor ideel til wokretter samt at blive paneret og stegt på panden. Tofu er i sig selv smagsneutral og skal derfor krydres eller marineres godt. </span></p>
<h5><b>Soja-kød</b></h5>
<p><span style="font-weight: 400;">Soja-kød er et populært alternativ til kød &#8211; mest udbredt i det indiske køkken. Soja-kød er fremstillet af sojabønner, som er blevet afskallet og af olieret. I Biogans soja-kød er der hele 52 gram protein pr. 100 gram, hvilket er over dobbelt så meget som hakket oksekød, som indeholder omkring 20 gram protein pr. 100 gram. Som regel skal soja-kød hydreres ved at ligge i varmt vand eller bouillon i omkring 10-15 minutter før brug, men dette kan også springes over, hvis man f.eks. koger det i en kødsovs eller anden form for sauce. <h5><strong>Ærtekød</strong></h5>
<p>Ærtekød er produceret af gule økologiske ærter, som er blevet ekstruderet.<br />
Ærtekød kan typisk erstatte animalsk kød. Det har i sig selv ikke megen smag og skal derfor krydres godt eller tilberedes i en urtebouillon. Vi anbefaler det til blandt andet lasagne, spaghetti bolognese og til bøffer. Ærtekød har et højt protein indhold på 55g pr. 100g (mere end i oksekød) og et højt kostfiber indhold på 16 g pr. 100 g.<br />
100 g rå ærtekød bliver ca. til 370 g, når det er tilberedt. Tilberedning: hvis ærtekødet skal bruges til en delle. Kog 500 ml vand op og tilsæt en bouillonterning, kom 100 g ærtekød i, tag gryden af varmen, og lad den stå i 5 min. Hvis du skal bruge ærtekødet i en bolognese, skal ærtekødet ikke forberedes først, men tilsættes som du ville tilsætte oksekød.</p>
<h5><strong>Tempeh</strong></h5>
<p>Tempeh er ikke en af de mest udbredte køderstatninger men den minder meget om tofu da den også er lavet af sojabønner. Tempeh er lavet af hele bønnen som er gæret naturlig, hvor tofu er lavet af væsken fra friske sojabønner. Fermenteringen betyder at tempeh har en fast tekstur. Tempeh smager lidt nøddeagtigt så krydderier som karry, hvidløg, ingefær samt chili vil passe godt til tempeh.<br />
Tempeh kan anvendes stort set som kød i velkendte retter.</p>

Skær kartofler og rødbeder i ca. 2 cm store tern. Pil hvidløgene og hak dem fint. Blend til du har en ensartet masse - kikærterne skal være helt blendet.Kom massen i en skål til røremaskinen og tilsæt seitanmel. Start med at ælte det med hænderne til massen hænger sammen. Lad nu dejen blive æltet med en dejkrog i 15-20 min. Dette step er meget vigtigt, da det er nu glutendelen i melet bliver aktiveret.</span><div class="wprm-spacer"></div><span style="display: block;">Nu skal du forme dejen som en pølse og pakke den stramt ind i sølvpapir. Fyld vand i en gryde og læg &quot;pølsen&quot; i en dampindsats. Lad den dampe med låg i 90-100 minutter. Pas på vandet ikke koger ud.</span><div class="wprm-spacer"></div><span style="display: block;">Tag nu dejen op og pak den ud. Lad den køle af i ca. 20 minutter. Når dejen er afkølet, kan du rive stykker af i den størrelse du foretrækker. 										<content:encoded><![CDATA[<p>Vi har byttet kylligespyd ud med disse lækre spyd med tofu og peberfrugt. De er perfekte til sommerens grillaftener! Grill spyd har altid været en stor favorit på grillen, da det kan være en af de bærende elementer på grillen. Det har aldrig været nemmere at lave vegetar spyd og der kan altid tilføjes flere grøntsager. Vi har brugt vores<a href="https://shop.biogan.dk/shop/tofu-naturel-500g-2213p.html"> egen tofu, </a>da den er fast og derfor nem at arbejde med.</p>
