Skyl den drænede jackfruit og skær de hårde hjørne af, som på en ananas. Hæld jackfruit, vand, limesaft, hvidløg og det meste af løget (gem noget til dressingen) i en gryde og lad det simre under låg i 15 minutter. Omrør derefter jævnligt for at brække jackfruiten i mindre stykker, så det ligner tun.<br />Hak gulerødder, pickles, nødder og æble og sæt det til side. Når jackfruitblandingen er kølet af, bland da de finthakkede ingredienser og resten af løget i den sammen med mayonnaise, chilipulver og sennep. Tilsæt citron, eddike, sennep og gurkemeje og blend. Tilsæt løbende olie til blandingen tykner. Skyld syltede agurker, capers og oliven og hak i små stykker. Bland disse sammen med grøntsagerne og rør mayonnaise i. Lad det stå i nogle timer i køleskabet eller allerbedst natten over.<br />
